The I-40 Kitchen: 50 States of MoFo: Tennessee Teacakes

With today, the 2012 Vegan Month of Food comes to a close.?? Before getting to today's recipe, let me reassure any concerned readers that posting here will continue until I have completed all 50 states (plus DC, for which I have a very good idea, if I say so myself).?? Daily posting has been kicking my behind, so the remaining 20 will follow slowly, perhaps one or two per week.? Anyone who knows me in real life knows I am stubborn and will most certainly finish.?

As I grew up in Tennessee and live in Nashville, there has been a lot of Tennessee food posted on this blog.?? So what should I make for this project?? Tennessee Teacakes (or T-cakes) came to mind.? This little confection is somewhere in the middle of the cupcake-to-brownie range. ?If a vanilla cupcake and a butterscotch blondie had a baby, this might be it. ?Teacakes became quite popular when a local woman started a business making them, with public praise from former Tennessee resident Oprah.? Unfortunately, this business owner died of cancer last year and her bakery closed.

There are a number of recipes online for Tennessee Teacakes.?? As this one is apparently quite close to the Oprah-endorsed variety, I took it as a starting point.? Here's the veganized version:

1 c. all purpose flour
1/4 t. salt
1/4 t. baking powder
1 c. brown sugar (the vegan organic kind if possible)
1/2 c. vegan margarine (e.g., Earth Balance)
1 T. vanilla
1/4 t. apple cider vinegar
4 oz. vegan cream cheese (storebought or homemade)
3 T. nondairy milk whipped with 1 T. ground flax until gooey

Mix together the flour, salt, and baking powder.

Combine the margarine and brown sugar in a saucepan and cook until melted.? Whisk in the vanilla, vinegar, vegan cream cheese, and milk/flax.? (You could add some vegan butter flavoring if you want to get crazy.)? Gently stir in the dry ingredients, only until combined.

Pour into 12 lined muffin cups.? The cups should be about 1/2 full.? Bake at 350F for about 15-17 minutes.? If in doubt, a toothpick should test clean.? Dust with powdered sugar before serving. ? You might want to double the recipe. ?We ate half the batch almost immediately.

Back to the larger project...? The remaining states are:? Delaware, Idaho, Iowa, Kansas, Michigan, Minnesota, Montana, Nebraska, Nevada, New Jersey, Oklahoma, Oregon, South Dakota, Texas, Virginia, Washington, West Virginia, Wisconsin, and Wyoming (with a bonus 51st post for the District of Columbia). ? Town of Harrietstown officials got an update Thursday on the ongoing construction of a network of mountain biking trails at the town-owned Dewey Mountain Recreation Area.

"The good news is we've built a lot of trail," Chris Gosling of the Barkeater Trails Alliance, or BETA, told the town board. "We've had a lot of great volunteer work days, and we've had a great season."

Gosling gave the board a color-coded map that showed the trails that have already been built, ones that are currently being developed and trails planned in the future. BETA member Leigh Walrath said there are now about 5 miles of mountain biking trails at Dewey, with plans to hopefully build another 2 to 3 miles.

Gosling said he's already seeing signs that Dewey is becoming a popular mountain biking spot.

Trial opens for California boy who killed neo-Nazi father

RIVERSIDE, California (Reuters) - A boy accused of murdering his neo-Nazi father when he was 10 years old went on trial in California on Tuesday, with prosecutors portraying the child as violent and troubled and a defense lawyer saying he acted to protect his family.

Both sides agree that Joseph Hall, now 12, shot his father, Jeffrey Hall, at near point-blank range on May 1, 2011. He is being tried in juvenile court and could be sent to a juvenile facility until age 23.

The case in Riverside County, east of Los Angeles, has drawn attention for Jeffrey Hall's neo-Nazi associations and for the rare circumstance of such a young child accused of murdering a parent.

Kathleen Heide, a criminology professor who has studied crimes by children, said that of 8,000 murders of parents by offspring over the last 32 years, only 16 were carried out by defendants age 10 or younger.

"It's very rare," said Heide of the University of South Florida. "If you talk about kids killing in general it's still very rare. What makes this even more unusual is that it's a 10-year-old first of all, then (it) becomes even more remote when the 10-year-old allegedly killed his father."

Because Joseph Hall is a juvenile, Riverside County Superior Court Judge Jean Leonard, who is conducting the two-week trial, will not decide guilt or innocence, but make a finding of whether the allegations are true - a decision that hinges on the boy's understanding of right and wrong at the time.

"Joseph has had trouble all of his life. He's attacked teachers, tried to stab them and strangle them with cords. Every institution expelled him," Riverside County Deputy District Attorney Michael Soccio told the court in opening remarks.

"Jeffrey Hall was given full custody of Joseph and his sister. He tried to help him. His son had these issues long before he was a Nazi and (was) just a plumber," Soccio said, citing the boy's attention deficit disorder and impulsivity, and noting he had "a violent streak."

'CONDITIONED' TO RACISM AND VIOLENCE

The prosecutor, who displayed grisly photographs of the slain man showing a bullet wound above his left ear, said Joseph Hall knew that the gun was dangerous and had planned the crime, telling his sister about his intentions the day before.

"He understood that if he shot someone in the head, they'd be gone," Soccio said. "He knew what he did was wrong. He knew full well what that meant."

Riverside police officer Michael Foster, who was first on the scene that day, testified that Joseph Hall confessed to shooting his father and said he felt bad about it, worrying out loud that his sisters would be angry with him.

The boy, dressed in a purple knit shirt and wearing glasses, showed little reaction in court to the proceedings or the photographs of his dead father.

Riverside County Deputy Public Defender Matt Hardy, in his opening statement, focused on the boy's upbringing by a father with ties to the National Socialist Movement that had "conditioned him with racism and violence."

The defense attorney said Jeffrey Hall, 32, took his son to neo-Nazi rallies, and that child protective services had been called to the home 20 times.

"Joseph, for his own reasons, decided to kill his father, to protect himself and his family, to stop the violence and be a hero," he said.

Hardy said that on the night before the shooting, Jeffrey Hall had gone to a National Socialist Movement party and left the gathering with a woman, returning home at 3:30 a.m.

On the night before the killing, Hardy said, Jeffrey Hall sent a text message to his wife, Joseph Hall's stepmother, reading: "Bitch, get out of the house, I'm divorcing you."

The stepmother, 27-year-old Krista McCary, later testified that the boy was a difficult child who had issues in school, was sometimes violent and was known to lie a lot.

McCary said that when she visited Joseph in a juvenile detention facility following his arrest, he told her he had a "hate list" of people he wanted to kill when he was released.

Aon Benfield launches flood cat model for Thailand : Insurance Daily

Aon Benfield has launched a flood model for Thailand following the country?s unprecedented flood insurance losses of 2011.

According to the reinsurance intermediary, last year?s losses, which are thought to be in excess of $15 billion, were due to a rapidly changing land-use pattern, record rainfall in the northern region and seasonal high tides in the Gulf of Thailand, in addition to man-made factors in managing the floods.

In response, the firm has produced a fully probabilistic Thailand flood catastrophe model with key features including:

Improved understanding of the key drivers of flood risk in Thailand.

Asian shares edge higher after U.S. growth

TOKYO (Reuters) - Asian shares edged higher on Monday after global equities ended last week on a subdued note, with investors torn between signs of stable growth in the United States and caution over the global corporate earnings outlook.

The MSCI index of Asia-Pacific shares outside Japan <.MIAPJ0000PUS> added 0.2 percent after shedding 1 percent on Friday and posting its biggest weekly drop in two months.

Australian shares <.AXJO> rose 0.4 percent, buoyed by solid U.S. economic growth in the third quarter, while South Korean shares <.KS11> opened 0.6 percent higher.

Japan's Nikkei average <.N225> was up 0.3 percent after tumbling 1.3 percent on Friday. <.T>

The dollar steadied at 79.63 yen, off a four-month high of 80.38 yen touched on Friday, but supported by expectations the Bank of Japan will take further easing measures at its policy meeting on Tuesday.

U.S. GDP grew at a 2 percent annual rate in the third quarter, slightly above a 1.9 percent forecast, and picking up from the second quarter's 1.3 percent rise. But the stronger pace of expansion fell short of what is needed for a substantial rise in employment.

European shares eked out gains on Friday after the U.S. data but U.S. equities ended largely flat, weighed down by poor earnings outlooks from major companies such as Apple , Amazon and South Korea's Samsung.

Over the weekend, China said industrial profits rose 7.8 percent in September from a year earlier to 464.3 billion yuan ($74 billion), up from a 6.2 percent drop in August, signaling some stability in the world's second-largest economy.

"Overall it suggests a continued period of subdued risk reduction bidding the U.S. dollar higher," said Societe Generale analyst Sebastien Galy.

Data showed that U.S. bond speculators scaled back their bullish bets on U.S. Treasuries futures early last week, even as worries about Spain and disappointing company earnings supported the bond market. Commodity Futures Trading Commission data released on Friday also showed currency speculators cut their bets against the U.S. dollar in the same week to the lowest since early September.

The dollar index <.DXY> measured against a basket of six major currencies hit a near seven-week high of 80.270 on Friday and was hovering near that level at 80.125 early on Monday.

Data from EPFR Global showed that investors pulled the most money out of U.S. stock funds in the past week than at any point in more than a year, an indication that many still harbor deep concerns about the global economy.

"Investors are taking on more risk," EPFR Global Research Director Cameron Brandt said in a note. "But they are doing so largely within the fixed income universe and, when it comes to equities, bypassing the U.S. in favor of emerging markets."

Bullish bets on U.S. commodities by hedge funds and other big speculators have fallen to a near 2-1/2-month low, trade data showed on Friday, as oil and gold saw heavy selling for a second straight week.

U.S. crude futures fell 0.4 percent to $85.95 a barrel and Brent eased 0.3 percent to $109.18.

The euro eased 0.1 percent to $1.2922, recovering from a two-week low of $1.28825 hit on Friday. The single currency has been trading in a broad range between $1.28 and $1.31, waiting for bailout prospects for struggling Spain and Greece to become clear.

Some traders said concerns about potential disruptions from Hurricane Sandy approaching the East Coast could keep trading somewhat subdued in Asia.

Fuel Fix ? Hot growth likely to cool in 2013

High oil prices, robust exploration and production activity, and strong international demand for Houston-made equipment for the oil and gas fields have kept the energy sector humming and attracted job-seeking newcomers.

While Houston?s red-hot growth will likely cool somewhat next year with a dip in worldwide energy demand, such key sectors as construction are expected to flourish.

We asked four economic observers ? an economist, a recruiter, a banker and an economic developer ? for their thoughts on where Houston is headed. Here is what they said:

Q: What words would you use to describe the Houston economy at the moment?

A: ?Scalding hot,? said Craig Richard, chief economic development officer for the Greater Houston Partnership. He pointed to the most recent 3.7 percent year-over-year job-creation rate and noted how Houston is outpacing all the other major metro areas.

?We knew health care was picking up, we knew energy was picking up, and now we?re seeing construction taking off,? he said. ?It has had a ripple effect throughout the economy. New homes and new commercial construction mean lots of new jobs in a lot of different areas.?

To an oil and gas recruiter, three words ? robust, buoyant and consistent ? come to mind.

Houston is more robust than the rest of the country, said Jamie Ferguson, vice president of U.S. operations for the recruiting firm Maxwell Drummond. The buoyancy comes from confidence in the energy industry, and growth has been consistent.

But the party can?t last forever.

?I would say the air is coming out of the balloon a little bit,? said Bill Gilmer, director of the University of Houston?s Institute for Regional Forecasting at the Bauer College of Business. ?It hasn?t burst, it hasn?t deflated, but it?s a little softer.?

Until now, Houston has outperformed the rest of the United States with gains in energy, manufacturing and other key industries that stem in part from strong worldwide growth that has driven demand for exports.

But some key trading partners ? namely China, India and Brazil ? have slowed, and Houston is feeling the effect, Gilmer said. The rig count is down, and business for the service providers isn?t as robust as it was.

?All the big positives that were working for Houston are not working quite so well now,? Gilmer said.

Q: Which sectors seem to be doing the best?

A: Real estate is very encouraging, and it?s broad-based, said Gina Luna, chairman of Chase in Houston. That includes office towers, industrial sites, apartments and single-family homes.

Sales of single-family homes are rising, and the supply of available homes continues to fall, she said. Some sellers get multiple offers in one day.

That doesn?t happen in every neighborhood, but people are moving here and buying houses.

?It?s a seller?s market,? Luna said.

Richard points to the improvement of the warehousing, transportation and utilities sector. The industry often lags, but it added jobs at a 4.1 percent rate over the past year.

It reflects the growth of other industries that have to store and ship their products, he said. It?s a sector that measures the health of the local economy.

Q: Which sectors are struggling?

A: Venture-backed technology companies are struggling a bit, Ferguson said. There is an appetite to run more efficient operations, but there is a reluctance, a ?general stall,? to adopt new technologies, especially when companies are doing the best they can to meet demand.

Companies are biding their time, he said. If something is working for them now, there is a tendency not to take on additional risk. New technology can be risky; while it might create efficiency, it can be more expensive at the beginning.

The financial sector is also having a tough time, Gilmer said.

Bankers are getting squeezed by increased costs of regulation at the same time they?re getting squeezed by low interest rates when they?re making loans or trying to invest, he said.

Even though Houston has gained thousands of jobs and family incomes are rising, there is still a reluctance to spend, Gilmer said.

Retailers have had a difficult time because consumers are focused on saving for the future and many are still gun-shy about making big expenditures.

Q: Gasoline prices have been hovering between $3.50 and $4 a gallon. At what point will high gas prices affect the behavior of Houstonians by driving less, buying more fuel-efficient vehicles or taking mass transit? Or are we so focused on our cars that higher gas prices won?t play much of a role?

A: When Gilmer?s former job at the Federal Reserve made it easier to take the bus, he could always tell when gasoline prices were surging because the commuter buses would fill up.

So he was surprised this summer when gasoline prices reached nearly $4 a gallon and Houstonians seemed to stay in their cars. Drivers aren?t comfortable with $3.50 to $4 a gallon gas, he said, but they?ve learned to live with it to some extent.

?People have adopted a new normal,? Luna said.

While she believes fuel prices are abnormally high for this time of year because of refinery disruptions on the West Coast, prices should eventually settle between $3.25 and $3.50 a gallon.

Drivers are adapting, Luna said. When Houston gets more rail lines, some commuters will likely rely more on public transportation.

Q: How do you foresee hiring in Houston during the next six months? Will it be stronger or not as strong as it has been?

A: ?I think there will be a plateau,? said Ferguson, who believes uncertainty over the presidential election and low natural gas prices will help keep the economy on its current path.

Some organizations are struggling with their strategy going forward, he said. There is a bit of a ?wait and see? going on right now.

?It?s hard to imagine it being any stronger than it is now,? said Richard, who calls the current pace of job growth ? 96,600 new jobs during the past 12 months ? torrid.

?I don?t think it?s sustainable,? he said. ?Not at that pace.?

Even if Houston comes off its 3.7 percent year-over-year growth rate, he said, growth is likely to remain strong.

Houston would still be the envy of other cities even if its year-over-year growth rate dipped to 2.5 percent to 3 percent, Richard said.

Q: Do you think Houstonians are confident enough to support the various bond proposals in the upcoming election to pay for improvements in libraries, fire stations, parks, new schools and new roads? Or will they hold back in their public spending?

A: Houstonians probably have enough confidence in the economy to make the investments, Gilmer said, but he?s not sure they trust the political system to spend their money wisely.

?I hope they recognize the need,? Gilmer said. ?We?re a growing city, and infrastructure is an important investment. Houston is pro-growth city.?

Many residents recognize that to be a truly great city, Houston has to invest in its infrastructure, Luna said. It?s also an important factor in attracting newcomers.

People and companies are moving to Houston, she said. And infrastructure is an important factor in how the city competes.

Q: Are you planning to spend more or less on your holiday shopping this year? What about other Houstonians? Do they feel flush or strapped?

A: Houstonians have jobs and they feel in control of their finances, Luna said, referring to recent research by Chase on local consumers. They?re not worried that they owe more on their houses than their houses are actually worth.

Houstonians are also more optimistic than consumers in other parts of the country, Luna said. Those signs taken together point to good holiday sales, she added.

Spending is up, Richard said, pointing to recent sales tax receipts. The recent surge in home sales will spur other home-related purchases such as furniture and home-improvement projects.

?I think we?ll have a good Christmas,? he said.

Q: Are construction and real estate on their way back? And are they here to stay?

A: The real estate market is on the way up, and construction is unlike any other in the country, Ferguson said.

Houston has become a bit of a mecca during the last few years, he said. People are coming for energy jobs, which ensures the real estate market will be fairly robust in coming years.

Richard doesn?t have to look far for signs of progress.

About five years ago, he bought a house in a new neighborhood near Ellington Airport. Construction came to a halt two or three years ago, but Richard began to notice the bulldozers again this spring. Now it seems every available lot is under construction.

?That?s happening in pockets all across the city,? he said.

And many of those houses are getting sold to people who drive cars with out-of-state license plates.

Microsoft has just outed Data Sense, a new app for Windows Phone 8 that helps ensure you don't burn through your data plan. On top of tracking your usage app-by-app, it compresses every single web page you browse to keep data consumed to a minimum, and also sniffs out WiFi hotspots when they become available. The app features a Live Tile to give an ongoing saga of the megabytes you've consumed and will warn you near a preset limit. Redmond claims the hotspot sniffing and compression will let you consume 45 percent less data "when compared to the competition" -- likely a reference to iOS and Android, which already have a similar feature. Seedcamp was camping in Budapest this week. If you?re a number person, you?ll love their number pitch: 200 applications, 20 selected teams and 2 investments. I had the pleasure to mentor 4 of the 20 startups. These teams came from Budapest, Bucharest, Brescia and Nis. It was a diverse event, carefully selected, quality fruit, strong mentors and a number of very serious investors from Central and Western Europe. The event was hosted in the Corvinus University, a prestigious location, and Peter Zaboji, the organiser amazed us again.

?European entrepreneurial investor of the year?? Klaus Hommels (early investor in Skype, Facebook, Xing and Spotify) has been on stage as key note speaker, mentored teams and was available for chit-chat ? wow ? I say wow because he wasn?t just wondering around in Budapest as a tourist, but he flew here as a friend of Peter (sits on EEF?s Advisory Board) and shared what was in his mind with the Seedcamp guys ? us. I still remember the shock in the room when he has spoken to one of the teams on stage and (I try to quote him) kindly said:

So, if you work super-hard and do your best ever job in the next 4 years,

Surely shocking and so far away from the Central European reality; I was so glad to see this happening with my own eyes.

Taking it all to the next level, Peter invited us all to his E Liquidity event, sponsored by KoWerk. Here, about 150 people met and mixed, exchanged ideas and business cards or just simply had fun. In case you haven?t been to Peter?s events, he?s doing a great job of filling his friends? calendars with quality events like this, slowly but steadily building a hub or better ? a family ? of entrepreneurs, wannabees and enthusiasts in the region. There are people who drive for hours from Cluj, Ljubjana, Prague or Bratislava to drop by for a few hours, and then drive back home. I look around at these events and can?t believe that this is happening in Budapest. Or in other words, I can?t believe that I?m in Budapest. Something great has started, quality stuff and it?s growing in impact. Once in a fortnight, there?s announcement of $1 m investment into a startup (graduated at EEF?s accelerator course) who has been around, just drinking ros? and chatting on one of these events last week. It?s a true elite club, always quality, always productive and always fun.

Where is all this going? I haven?t a clue. Klaus Hommels said in his pitch something that I see as a steering factor in the European entrepreneur ecosystem though. He compared Europe, China and the USA in terms of startup revenue and average investment size in the light of GDP per capita. His tarot showed Europe and China somewhat in the same range, while they stood by the US column chart like a parking mall by a skyscraper. It?s obvious that startups make their big money in the US and Europe is purely the talent sourcing department ? and you know what? I?m very proud of this. The world has changed and I?m glad to see this rather special part of Europe to open and offer these amazing opportunities to the best talent ? to let them shine where there?s need for sunshine.
